The Freshest Watermelon Juice

Watermelon2Watermelon is synonymous with long summer days -preferably spent by the beach. It is quite a sticky option for taking with you on the go, so I have been enjoying a fresh watermelon juice to keep me cool. Because watermelon is 92% water (and 6% sugar) it is really great for keeping you hydrated, and can easily be made in a juicer or a blender. It also contains vitamin C, beta carotene and lycopene. With such a high water content, watermelon doesn’t have the strongest taste, so I like to add plenty of lime, mint and sometimes strawberries to give this juice an added kick of flavour. Make this shortly before you wish to drink for maximum nutritional benefit, but the juice will keep for a couple of days, and will just require stirring as the juice separates and settles.

Ingredients
  1. 1/4 watermelon
  2. 1 lime
  3. About 10 fresh mint leaves
  4. Handful of strawberries
Instructions
  1. Cut the thick rind off the watermelon. Discard of this, or have a go at making watermelon pickle if you're feeling creative.
  2. Either squeeze out the lime juice by hand, or peel/cut off the rind.
  3. Run everything through the juicer, or add to the blender.
  4. If using the juicer, serve straight away. If using the blender, strain through a sieve to remove any stray rind or pith and then serve.
